Baker Recipe for Choux Pastry

CHOUX PASTRY MIX 1000 gm
Water (40º C - 60º C) 1500 gm

Baking Method

Blade Paddle
Mix choux pastry mix with water and *eggs(if applicable) on Slow Speed
Allow the batter to rest for 10 minutes
Pipe on baking sheet or as desired
Bake Time 30 - 35 min
Baking Temperature 200º C - 220º C with steam
For making Crullers Follow the above same procedure
After resting pipe into the rings
Fry At 160ºC For About 10 Minutes.
