WURZEL BROT 25 250 gm
Vegetable oil (Optional) 20 gm
Fresh yeast / Dry yeast 25 gm / 10 gm
Water Cold 750 gm

Baking Method

Mixing time 4 min slow & 8 min fast
Dough Temperature 24ºC to 26ºC
Bulk Fermentation 40 min
Scaling Weight 300 gm
Final Proof 30 min to 40 min at 32ºC and 75% relative humidity
Baking Temperature 240ºC under falling temperature 210ºC
Baking Time 35 min (approx.)
