Blueberry Muffins

What could be more scrumptious than an alluring muffin dome bursting with fresh blueberries. Serve your customers, these delicious eggless blueberry muffins perfect for breakfast muffin/tea-time snack
BAKE TEMP : 180°C
MIXING TIME : 6-7 Mins
BAKE TIME : 20 - 25 mins
PREP TIME : 30 mins

Ingredients

RECIPE
FOR MUFFINS:
CRÈME MUFFIN VEG - VANILLA  - 1000 gm
WATER -  385 gm
VEGETABLE OIL - 325 gm

FOR BLUEBERRY COMPOTE:
BLUEBERRIES - 250 gm
SUGAR-  20 gm

Method

FOR BLUEBERRY COMPOTE
In a small saucepan over medium flame heat, bring blueberries and sugar to a simmer. Cook, mashing occasionally until thickened, about 5 minutes. Let it cool to room temperature, about approximately 10 minutes.
 
FOR MUFFINS
Using a whisk blade attachment on a planetary mixer,  blend the muffin mix with water and mix them at slow speed for 1 minute.  Add oil and again mix at slow speed for 1 minute. Scrape the batter and mix at medium speed for 5 minutes. Add blueberry compote and mix for 30 seconds. Pour into muffin tins or cups and bake at 180°C for 20 minutes to 25 minutes.
