FOR BLUEBERRY COMPOTE
In a small saucepan, add blueberries & sugar and simmer over a medium flame heat. Cook & mash occasionally until thickened, for about 5 minutes. Let it cool to room temperature, for approximately 10 minutes.
FOR MUFFINS
Using a whisk blade attachment on a planetary mixer, blend the muffin mix with water and mix them at slow speed for 1 minute. Add oil and again mix at slow speed for 1 minute. Scrape the batter and mix at medium speed for 5 minutes. Add blueberry compote and mix for 30 seconds. Pour into muffin tins or cups and bake at 180°C for 20 minutes to 25 minutes.
