How to make Gluten-Free Almond Biscottis

Bake Gluten-Free Almond Biscottis easily! Enjoy the perfect blend of crunch and tenderness in every bite. Elevate your gluten-free baking with this almond-infused delight!
BAKE TEMP : 140 - 180ºC
MIXING TIME : 4 mins
BAKE TIME : 10 - 12 mins
PREP TIME : 30 - 36 mins

Ingredients

SwissBake® Gluten-Free Cookie Mix - 300g
Butter - 15g
Eggs - 78g
Almond Flakes - 120g
Fennel Powder - 20g
Lemon Zest - As required

Method

  • Place all the ingredients in a mix bowl using a paddle attachment, whip it together for 1 min on slow speed
  • Scrape the mixture then whip again for 3mins on high speed.
  • Once the dough is combined, shape the dough into small, elongated rectangular-shaped logs of approx. 30cm long and 4cm-5cm wide
  • Place them on a baking tray lined with parchment paper
  • Bake it on 170°C to 180°C for 10-12 mins or until its light golden in colour
  • Put them into the freezer or keep outside at room temperature for cooling.
  • After cooling, slice it into 1 cm thick pieces.
  • Bake it at 140°C to 160°C for another 15 to 20 minutes.
