Matcha Tea Layer Cake with White Chocolate Frosting Recipe Prepared from SwissBake® Matcha Tea Cake Mix

Ingredients

Recipe for the Matcha Cake Base
CAKE MIX - 1000 gm
SUNFLOWER OIL - 100 gm
WATER - 550 gm
 
Recipe for White Chocolate Frosting
Unsalted softened butter - 250gm / 1 cup
Castor sugar - 300gm / 1 1/2 cups 
Melted white chocolate - 100gm / 6 tbsp 
Salt - 1gm / 1/4 tsp 
Milk - 5gm / 1 tsp  

Method

Method for Matcha Tea Layer Cake

Using a whisk attachment on a planetary mixer, blend the cake mix with water and mix them at slow speed for 1 minute. Scrape the batter & mix again at high speed for 3 minutes. Add oil while slowly mixing at slow speed for 1 minute. Pour the batter into the baking tins and bake at 160°C for approximately 25 to 30 minutes for 300 gm batter.

Note - For the perfect color profile, strictly do not bake above 160°C & total baking time should not exceed 30 minutes.
 
Method for white chocolate frosting
 
To make the white chocolate frosting, mix together the butter, confectioner's sugar, melted white chocolate, salt, and milk in a large mixing bowl using an electric mixer until well combined and creamy. Refrigerate if it's not being used immediately.
 
To Prepare the final cake: Place one cake layer on a flat surface and spread the frosting on top. Place another cake layer on top of the frosting. Finish by covering the top and sides with frosting. Top with matcha powder.
