How to make High Protein Toasties with Roasted Beetroot Hummus

Roasted Beetroot Hummus & High Protein Toasties Recipe Prepared by SwissBake® Prot Max P-30
BAKE TEMP : 230°C
MIXING TIME : 19 - 22 mins
BAKE TIME : 50-60 mins
PREP TIME : 130 - 150 mins

Ingredients

PROT MAX 30 P30 – 1000g
Water (Cold) – 900g
Fresh yeast – 40g

Ingredients for Roasted Beetroot Hummus:
Roasted Beetroot - 7nos
Cooked Chickpeas - 800g
Water - 190g
Lemon Juice - 3nos
Olive Oil - 60g
Garlic Cloves – 80g
Salt – as per taste
Tahini - 100g

Other Ingredients:
Black Olives - 1 Bottle
Olive Oil - 1 Small bottle 

Method

  • Make beetroot hummus using the ingredients mentioned above
  • Place all the SwissBake® Prot Max P30 along with other ingredients for bread in the mixing bowl.
  • Using a spiral mixer with a hook attachment, mix at slow speed for 4 minutes and fast speed for 15-18 minutes
  • Dough temperature should be between 24°C to 26°C
  • Bulk fermentation for 15min approx.
  • Scale the dough weight to 500g to 600g in a mould.
  • Final proofing for 50-60 mins at 32°C
  • Bake with lots of steam at 230°C under a falling temperature of 210°C for 50-60mins
  • Once it cools down completely, cut equal slices of bread.
  • Apply generous amount of beetroot hummus to the bread
  • Sprinkle some chopped black olives, drizzle some olive oil and serve it.
