Citrus – Fruit Cake Recipe

Create delectable Citrus-Fruit Cakes for the holidays using our Spicy Plum Cake Mix. Elevate your festive sales with this irresistible recipe
BAKE TEMP : 160 - 170ºC
MIXING TIME : 5 mins
BAKE TIME : 30 - 40 mins
PREP TIME : 40 - 45 mins

Ingredients

Fruit Cake Batter:
SwissBake® Spicy Plum Cake Mix – 1000g
Water – 550g
Vegetable Oil – 100g
 
Fruit Mix:
Red Cherries – 100g 
Brown Raisins –100g
Orange Peels – 100g
 
Garnish:
Orange Slices – 5 slices
Lemon Slices – 3 slices

Method

  • Slice the oranges & lemons and coat it with sugar
  • Arrange it in the cake moulds and keep it aside
  • Using the paddle attachment on a planetary mixer, blend Swissbake® Spicy Plum Cake Mix & water at slow speed for a minute
  • Scrape the batter and mix again at medium speed for 3 minutes
  • Add oil and mix again at slow speed for 1 minute
  • Add 300g of the fruit mix to the batter and fold it gently. 
  • Pour the batter into cake moulds and bake at 160°C to 170°C for 30 to 40 minutes or until baked
  • Once the cake is out of the oven turn it upside down on the wire rack
  • Serve once it cools down
