How to make Herby Oats-Pesto Delight

Ingredients

Ingredients (for Oats Bread)
Haffer Kleie Brot 25 – 250g
Refined wheat flour – 750g
Salt – 20g
Water – 600 to 650g
Yeast – 30g
 
Ingredients (for Pesto Sauce)
Pine nuts
Basil – 240g
Olive oil – 450g
Garlic Cloves – 6 to 8 no.
Parmesan Cheese – 150g
 
Other Ingredients:
Button Mushrooms - 3 to 4 packets
Butter - 300g
Garlic- 50g to 60g
Salt & Pepper – as per taste 

Method

  • Make pesto sauce out of the ingredients mentioned above and keep it aside.
  • Take a saucepan sauté the button mushrooms with butter & garlic and keep it aside.
  • For the bread dough, place all the ingredients in a mixing bowl.
  • Use a spiral mixer, mix at slow speed for 4 minutes and fast speed for 6 minutes.
  • Bulk fermentation for 30 mins, scale the dough weight to 500gms, final proofing for 60 to 70 mins.
  • Bake at 230°C under a falling temperature of 210°C for 30 mins with lots of steam.
  • Once it cools down completely, cut equal slices of bread.
  • Apply pesto on the bread slice, put the mushroom on top.
  • Garnish it with mixed herbs and serve.
