Spicy Fruit Cake Tart

BAKE TEMP : 160 - 170ºC
MIXING TIME : 5 mins
BAKE TIME : 30 - 40 mins
PREP TIME : 60 - 65 mins

Ingredients

For Tart Shell:
FLOUR – 180g
ICING SUGAR – 55g
BUTTER – 115g
SALT – 2 to 3g
EGG – 1, whole
Note: egg can be substituted with additional 30-40g of flour
 
Fruit Cake Batter:
SwissBake® Spicy Plum Cake Mix – 1000g
Water – 550g
Vegetable Oil – 100g
 
Spice & Fruit Mix:
Fresh Apple - 2, diced in cubes
Dates, diced in cubes – 100g
Black Raisins – 100g
Brown Raisins – 100g
Butter – 200g
Sugar – 50g
Star Anise – whole, 2-3
Cinammon – sticks, 2-3

Method

BAKERS’ METHOD FOR TART SHELL:
  • Make tart shells out of the ingredients mentioned above
  • Par-bake the tart shells and keep it aside to cool down
 
BAKERS’ METHOD FOR PLUM CAKE:
  • Using the paddle attachment on a planetary mixer, blend Swissbake® Spicy Plum Cake Mix & water at slow speed for a minute
  • Scrape the batter and mix again at medium speed for 3 minutes
  • Add oil and mix again at slow speed for 1 minute
  • Pour the batter into cake moulds and bake at 160°C to 170°C for 30 to 40 minutes or until baked
 
BAKERS’ METHOD FOR SPICY FRUIT CAKE FILLING:
  • Once it cools down completely, crumble the plum cake.
  • Take a saucepan add butter, sugar, star anise, cinnamon stick, apple & raisins and sauté it properly
  • Once everything is cooked properly add the crumbled plum cake to the fruit & spice mixture and mix it properly
  • Now put the mixture in the tart shell and add a star shape tart on it and bake it at 180°c for 15 to 20 minutes or until golden shade.
