MIXING TIME : 5 mins
BAKE TIME : 25 - 30 mins

Ingredients

Fruit Cake Batter:
SwissBake® Spicy Plum Cake Mix – 1000g
Water – 550g
Vegetable Oil – 100g
 
Fruit Mix:
Cashew – 100g 
Brown Raisins –125g
Black Raisins –125g
 
Meringue:
Egg Whites – 5 nos.
Castor Sugar – 150g

Method

  • Whip up classic French meringue out of the ingredients mentioned above and keep it aside
  • Using the paddle attachment on a planetary mixer, blend Swissbake® Spicy Plum Cake Mix & water at slow speed for a minute
  • Scrape the batter and mix again at medium speed for 3 minutes
  • Add oil and mix again at slow speed for 1 minute
  • Add 350g of the fruit mix to the batter and fold it gently. 
  • Pour the batter into cake mould and bake at 160°C to 170°C for 25 to 30 minutes or until baked
  • Once the plum cake cools down, apply French meringue and torch it before serving
