Description
SwissBake® Maffle Mix is a complete premix developed for producing mochi-style waffles with a distinctive chewy interior and crisp, light exterior. Designed specifically for professional use and commercial kitchens, our Mochi Waffle Mix allows the preparation of mochi waffles using standard waffle irons, eliminating the need for specialized equipment or additional ingredient sourcing.
The formulation ensures controlled batter viscosity, consistent spread, and uniform texture across batches, making it well suited for cafés, QSRs, live breakfast stations, brunch services, and high-output waffle operations where speed, consistency, and reliability are essential.

Modified Starch, Refined Wheat Flour, Castor Sugar, Milk Solids, Iodised Salt, Raising Agents, Emulsifiers, Nature Identical Flavouring (Vanilla)
Method
Preheat & lightly grease the waffle iron with oil or releasing spray before preparing the batter. Combine SwissBake® Maffle Mix, water & oil, and mix for 4–5 minutes until a smooth, homogeneous maffle batter is obtained. Pour approximately 2/3 cup of batter onto the pre-heated waffle plates and bake at 170°C to 175°C for 5–6 minutes, or until the maffle are evenly baked with a crisp exterior.
