Spicy Fruity Nutty Festive Cake

Ingredients

Fruit Cake Batter:
SwissBake® Spicy Plum Cake Mix – 1000g
Water – 550g
Vegetable Oil – 100g
 
Fruit & Nut Mix:
Tutti Fruity – 120g
Red Cherries – 100g
Cashewnuts – 100g
Black Raisins – 125g
Brown Raisins –125g
Dates – 140g
Orange peels – 80g
 
Layering, Garnish & Decoration:
White Fondant – 1kg
Fruit Jam – 50g

Method

  • Using the paddle attachment on a planetary mixer, blend Swissbake® Spicy Plum Cake Mix & water at slow speed for a minute
  • Scrape the batter and mix again at medium speed for 3 minutes
  • Add oil and mix again at slow speed for 1 minute
  • Add the 800g of fruit & nut mix into the batter and fold it gently
  • Pour the batter into cake moulds and bake at 160°C to 170°C for 30 to 40 minutes or until baked
  • Once it cools down completely, apply a thin layer of fruit jam
  • Roll out a thin layer of white fondant and put it on the baked plum cake and serve it with other desired choice of garnishes and icings
