Description of HOLIDAY COOKIE MIX

SwissBake® EF Celebration Holiday Cookie mix is a completely dry mix formulated for the preparation of American style soft and chewy cookies with unique taste and flavour profile. It includes a combination of various natural ingredients like spices, barley malt and real caramel powder that give it a spicy-sweet taste and a malty caramel flavour profile and mouthfeel. These cookies are extremely easy to prepare and just require the addition of water and unsalted butter and can be prepared within 45-60 minutes in a few simple steps. They have been formulated in order to ensure consistent baking results irrespective of baking expertise. Highly recommended for any kind of celebration where customers desire unique and innovative products. Ideal for all kinds of professional and commercial baking applications.

Method

Place the cookie mix in a mixing bowl. Add water and butter into the bowl. Using a paddle attachment on a planetary mixer, mix on slow speed for 1 minute. Scrape down the mixture and mix again on medium speed for 2 minutes. Once the dough is formed, wrap it in a cling film and refrigerate it for 15 minutes, Remove the dough from the refrigerator and divide it into 20 gm to 30 gm for smaller cookies and 45 gm to 70 gm for large cookies. Shape the dough into a cookie ball and place it on the baking tray. After placing, slightly press the cookies on the baking tray with butter paper / parchment paper. Bake it at 160 - 180ºc for approximately 20 minutes to 22 minutes in a deck oven.

Tips

Butter should be at room temperature & semi-soft.
Glycerine is optional for better shelf life.

How much is the shelf life of the SwissBake® Holiday Cookie Mix?

The mix has a shelf life of 9 months when stored under 21ºc in dry and hygienic environment. The cookies can be stored in a closed air tight jar after cooling for up to 7 days. It is preferable to store in a refrigerator for better shelf life.
