Water 565 gm - 600 gm
Fresh / Dry Yeast 30 gm / 12 gm

Baking Method

Mixing time (approx) 4 min slow & 6 min fast
Dough temperature 24ºC to 26º C
Bulk fermentation 30 min
Scale weight 500 gm
Final Proof 50 - 60 min under 75% humidity
Baking temperature 230ºC falling 200ºC
Baking time 30 - 40 min at 230º C
