Description

SwissBake® Dark Grainy Premix is a highly nutritious multigrain bread mix with a variety of seeds and makes one of the healthiest multigrain breads that you can offer to your
customers. This concentrate is made using a blend of 7 different seeds and cereals like sunflower seeds, flax seeds and rolled oats that significantly increase the nutritional value and fibre content of bread. Added roasted malt in the premix imparts a naturally dark colour and a unique malty taste to the bread.

Method

Place all the ingredients in a mixing bowl. Use a spiral mixer, mix at slow speed for 4 minutes and then mix at a fast speed for 5 minutes. Dough temperature should be between 24°C to 26°C. Bulk fermentation for 30 minutes. Scale the dough weight to 400 gm. Intermediate proofing is not required. Final proof for 40 minutes at 32°C under 75% relative humidity. Bake at 230°C under falling temp. of 210°C for approximately 30 to 40 minutes for a 400 gm piece of dough. Bake with lots of steam.
