POTATO BUN MIX 1000 gm
Cold Water 500 gm - 520 gm
Fresh Yeast / Dry Yeast 40 gm / 15 gm

Baking Method

Put All The Ingredients In A Mixing Blowl
Mix At Slow Speed For 2 min
Mix At High Speed For 8 to 9 min
Dough Temperature 24ºC to 26ºC
Bulk Fermentation 20 min
Scaling Weight 100 gm
Final Proof 40 to 45 min at 34ºC and 85% relative humidity
Baking Temperature 190º C to 200º C
Baking Time 15 min for approx. 100 gm of dough
