Baker Recipe for Bread Improvers

Wheat Flour 960 gm
Sugar 150 gm
Salt 20 gm
Fresh Yeast 65 gm
Water ( Cold ) 510 gm
Shortening / Fat 35 gm

Baking Method

Mixer Type Spiral
Mix on slow speed for 4 min
Then mix on high speed for 6 min
Form a well developed dough
Dough Temperature should be at 20°C
Round up the dough to 60 gm / 80 gm / 120 gm
Intermediate proof not required
Final proof for 55 min to 60 min at 32°C
Baking temperature 260°C to 280°C
Baking Time 6 min to 8 min
