Description
SwissBake’s Soft Bun Concentrate is a specially formulated concentrate to make soft and light burger buns, bread rolls, fruit breads and hot cross buns. It imparts good flavour soft crumb and increased freshness.
Key Ingredients
Soya flour, Emulsifier, Sourdough powder, Vitamin C, Enzymes.
Method
Mix on slow speed for 4 min and then on high speed for 6 min. Form a well develop dough. Dough temperature should be at 20°C. Round up the dough (60 gm / 80 gm / 120 gm). Intermediate proof not required. Final proof for 55 min to 60 min at 32°C. Bake at 260°C to 280°C for 6 min to 8 min.
